Pan-Fried White Snapper with Chili & Passion-Fruit Sauce

Our latest and one of our tastiest! The pan fried white snapper fillet is cooked to perfection and topped with a cucumber relish and a chili and passion-fruit sauce and just goes to show how versatile white snapper is!

Pan-Fried White Snapper with Chili & Passion-Fruit Sauce

Ingredients:

Fillet of white fish

Salt

Pepper

Lime Juice

Passion-fruit pulp

Ginger

Sugar

Chili

Amount:

1 Skinless fillet

1 teaspoon

1 pinch

1 tablespoon

100 ml

3 slices

50 gr

2 pieces

Instructions:

1. Add the passion-fruit pulp and sugar into a pot and bring to the boil. Reduce to 1/3 and remove from heat and leave to cool

2. Thinly slice the chilli and add to the sauce

3. Heat a frying pan on a medium heat. While this is happening marinade your fish in the salt, pepper, lime juice and then add it all to the pan (the side of the fillet where the skin was should be facing up) cook for a couple of minutes, flip the fish and cook for a further minute

4. Remove the fish from the pan, brush with the passion-fruit sauce and then place in an oven (pre heated to 180 degrees Celsius) for around 1 minute. Remove from the oven, brush with passion-fruit sauce once again and cook in the oven for a further minute

5. Once cooked, remove from the oven and rest for a minute before covering the fish in the rest of your sauce and serving
